Mocktails and Meatless Monday

Good to know that so many of my friends are eating superfoods!  Just to show you I'm not a fanatic about diet, here are a few of my purchases from Costco yesterday.  I didn't find chia but I did find hemp and acai berries.  The Hemp Hearts can be used on salads, cereal or yogurt and the acai berries are in frozen smoothie packs.  I bought some nonfat vanilla soy milk to make the smoothies.  You can add a banana or use juice in place of milk.  And for fun, I bought Crystal Lights new drink mixes:  Mojito and Margarita.

I don't know if anyone remembers but I used to make my "Skinny Margaritas" using Crystal Light Lemonade mix and now they've made actual mixed drink mixes they call "mocktails!"  Do you think they stole my idea?  They also make an Appletini mix.

We had veggie burgers for Meatless Monday and tonight we are having wild caught halibut- also from Costco.  I'm marinating it in lemon, lemon zest, soy, garlic and scallions and we're having stirfry bok choy with minced fresh ginger, garlic and low-sodium soy sauce.  Costco also sells frozen brown rice in individual packets that we will have on the side.  What would I do without Costco?

Tonight on ABC- Concert for the Queen with Paul McCartney, Elton John, Annie Lennox, Stevie Wonder, Tom Jones and Kylie Minogue

  1. yes, I should stock up on good stuff like that, so I can have it on a more regular basis.

    Enjoy the concert tonight! It was fantastic. Paul McCartney was best, but I'm biased. A word of advice is to give Cliff Richard the swerve (hopefully they'll edit him out of yours),and nap time is definitely when Cheryl Cole sings with Gary Barlow. Gary was good, but Cheryl. Oh!

    And look out for Grace Jones. That woman is amazing! Oh, and lets all ignore the people saying 'Happy Birthday' to the Queen! (Grace & Stevie Wonder, I mean you!)Seems a little bit of confusion there!

    But, it's a great, great show. So many good bits, a few dull, but really rather fabulous. You might notice the Queen wearing ear plugs, which is rather funny!

    Enjoy your day. Think of me this p.m, trying to control approx 20 kids! argh!

    I don't get to Costco as much as I should. Just finding the time. But they do have some of the greatest items on sale there. Your dinner sounds delicious last night and tonight! Thanks for the reminder about Paul tonight :)) I almost forgot to DVR it. Have a wonderful Tuesday.

    Love your food finds! I am loving Chia seeds, I normally add them to my greek yougurt. YUM!

    I eat a lot of the superfoods and love them.
    Wild caught Salmon gives me visions of a wild bunch of fisherman on a party boat for some reason.
